Handheld near-infrared spectrometer allows on-line prediction of beef quality traits

Arianna Goi et al.

Summary: The study aimed to evaluate the ability of a miniaturized near-infrared spectrometer to predict various chemical parameters and quality traits in beef, showing satisfactory results for predicting moisture, fat and protein contents, fatty acids, minerals, and other quality traits. The handheld instrument demonstrated potential for on-line prediction of beef quality traits without the need for sampling or meat products' loss due to carcass deterioration.

Improving TVB-N prediction in pork using portable spectroscopy with just-in-time learning model updating method

Fan Zhang et al.

Summary: This study proposed a model updating method based on just in-time learning (JITL) to improve the predictive performance of near infrared spectroscopy (NIR) models for non-destructive prediction of total volatile basic nitrogen (TVB-N) in pork. The results showed that the models updated with the JITL approach achieved high predictive performance on new independent batches, making NIR spectroscopy a preferred choice for assessing quality features in pork meat.

In-Line Estimation of Fat Marbling in Whole Beef Striploins (Longissimus lumborum) by NIR Hyperspectral Imaging. A Closer Look at the Role of Myoglobin

Jens Petter Wold et al.

Summary: This study evaluated the application of high-speed NIR hyperspectral imaging for online measurement of beef loin marbling. The calibrated NIR system accurately predicted marbling in both whole loins and slices. However, the concentration of myoglobin and its oxygenation state in the meat may affect the accuracy of the prediction.

Objective grading of eye muscle area, intramuscular fat and marbling in Australian beef and lamb

S. M. Stewart et al.

Summary: This study tested a prototype vision system in diverse beef and lamb carcasses and found promising results in predicting key traits such as eye muscle area and intramuscular fat percentage in beef, while further work is needed to improve accuracy in lamb carcasses.

Are Marbling and the Prediction of Beef Eating Quality Affected by Different Grading Sites?

Jingjing Liu et al.

Summary: This study compared the effects of grading Musculus longissimus thoracis et lumborum for marbling at the fifth and tenth thoracic vertebrae, finding no significant difference in marbling scores but differences in meat and fat color. It suggests that marbling grading can be effectively conducted at the fifth thoracic vertebrae for the Meat Standards Australia (MSA) system in France and Europe, with potential adjustments needed for other critical MSA scores.

Partial least squares and machine learning for the prediction of intramuscular fat content of lamb loin

Stephanie M. Fowler et al.

Summary: The study aimed to predict intramuscular fat (IMF) using Near Infrared (NIR) spectroscopy with Partial Least Squares (PLS) and machine learning analysis methods. The outcomes of IMF prediction models were similar between the two analysis methods. Additionally, discrepancies in spectra and wavelengths selected across different slaughter events were highlighted in the study.

Main regulatory factors of marbling level in beef cattle

Don Nguyen et al.

Summary: The content of intramuscular fat in beef, which determines marbling levels, is influenced by genetic, sexual, nutritional, and management factors. Effective strategies that simultaneously apply these factors are essential for achieving desired IMF content without detrimental impacts on feed efficiency in high-marbling beef production.

The concentrations of immunoglobulins in bovine colostrum determined by the gold standard method are genetically correlated with their near-infrared prediction

Angela Costa et al.

Summary: The study examined the genetic correlations between reference and near-infrared predicted colostrum immunoglobulin concentrations, finding a strong correlation between reference and predicted IgG concentrations. Predictions for IgA and IgM concentrations were less accurate compared to IgG.

Comparison of smartphone and lab-grade NIR spectrometers to measure chemical composition of lamb and beef

Cassius E. O. Coombs et al.

Summary: The study compared the precision and accuracy of predicting pH, water, crude protein, and IMF of different sample presentations using smartphone and benchtop MRS sensors. While the smartphone sensor showed comparable accuracy and precision in predicting meat composition as the benchtop MRS, neither sensor reliably predicted quality attributes for industry or consumer applications.
