Glycation with uronic acid-type reducing sugar enhances the anti-inflammatory activity of fish myofibrillar protein via the Maillard reaction

Wenzhao Li et al.

Summary: This study investigated the role of carboxyl group in uronic acid in enhancing the anti-inflammatory activity of fish myofibrillar protein. Lyophilized Mf was reacted with various reducing sugars through the Maillard reaction, and the anti-inflammatory activity was evaluated. The results showed that glycation with uronic acid-type reducing sugars greatly enhanced the anti-inflammatory activity of Mf, while glycation with glucose or galactose had no significant effect. The study also suggested that the number of carboxyl group in bound reducing sugar could be a determining factor for the enhanced effect.

Heteroconjugates of quercetin with 4′-O-sulfate selectively accumulate in rat plasma due to limited urinary excretion

Seiya Tanaka et al.

Summary: Quercetin and methylquercetin are present in various sulfate and glucuronide conjugates in the plasma of quercetin-fed rats and humans. The identification and quantification of different quercetin conjugates in blood plasma, urine, liver, and kidney tissues after oral administration of quercetin were achieved using LC/MS/MS analysis. The study revealed that the profiles of quercetin conjugates varied significantly among different biological samples, indicating selective excretion pathways for these conjugates.

Effect of drying treatment on the extractability and anti-inflammatory function of photosynthesis-related components in dulse Palmaria palmata and their efficient recovery from dried thallus

Daichi Sugita et al.

Summary: In this study, it was found that hot-air-dried dulse can be used as an anti-inflammatory material. However, the extractability of the anti-inflammatory components is reduced by hot-air drying, which can be resolved by enzymatic degradation of algal cells.

Natural Xylooligosaccharides Exert Antitumor Activity via Modulation of Cellular Antioxidant State and TLR4

Tsvetelina Batsalova et al.

Summary: This study aimed to evaluate the cytotoxicity and inhibitory potential of commercially available xylooligosaccharides (XOS) derived from corn against tumor cells. It was found that XOS exhibited antioxidant activity and showed remarkable inhibitory effect on lysosomes. However, it also affected mitochondrial functionality. XOS treatment reduced the production of proinflammatory cytokines and had a tumor-cell-specific influence on the glutathione antioxidant system.
