Functional relevance and health benefits of soymilk fermented by lactic acid bacteria

Fermented soymilk is gaining importance in the functional food industry due to its improved technological qualities and ability to produce diverse metabolites by probiotic bacteria.

This paper discusses the technologies and materials used for co-encapsulation, as well as the stability, survival, and release behavior of co-encapsulated probiotics.

Comparative studies on the effect of probiotic additions on the physicochemical and microbiological properties of yoghurt made from soymilk and cow's milk during refrigeration storage (R2)

Summary: The addition of probiotics can significantly reduce syneresis and increase the compact network of soymilk yogurt, as well as shorten the time needed to reach pH 4.5. While the pH of cow's milk yogurt slightly decreased during storage, the pH of soymilk yogurt remained relatively constant. Adding probiotics can significantly decrease the firmness of cow's milk yogurt, while maintaining stability in soymilk yogurt during storage.
