Quality relationship between smoked and air-dried bacon of Sichuan-Chongqing in China: Free amino acids, volatile compounds, and microbial diversity

Summary: The quality formation of Chinese bacon is closely related to flavor compounds and microbial composition, and the contribution of microorganisms to flavor has not been fully explored. This study investigated the relationship among microorganisms, free amino acids, and volatile compounds in bacon produced by different drying processes. The results showed that bacteria, especially Staphylococcus and Salinivibrio, were crucial in regulating and shaping the flavor of bacon, while some sub-abundance bacteria like Kocuria enriched the flavor of bacon.

Effects of NaCl curing and subsequent fermentation with Lactobacillus sakei or Lactobacillus plantarum on protein hydrolysis and oxidation in yak jerky

Summary: The study investigated the effects of NaCl addition and fermentation with Lactobacillus sakei or Lactobacillus plantarum on proteolysis and protein oxidation in yak jerky. Increasing NaCl content led to a decline in proteolytic activity, peptide content, and free amino acid concentration. Jerky fermented with lactobacillus showed higher proteolysis profiles than the control, and Lactobacillus sakei fermentation resulted in the highest proteolysis. NaCl addition promoted protein carbonylation, sulfhydryl loss, and tryptophan fluorescence quenching. Fermentation with lactobacillus, especially Lactobacillus sakei, effectively reduced protein oxidation in salted jerky. The changes in protein bands observed in the electrophoretogram were attributed to the combined effects of NaCl curing and microbial fermentation.

Effects of selected Bacillus strains on the biogenic amines, bioactive ingredients and antioxidant capacity of shuidouchi

Summary: The composition of biogenic amines (BAs) in eleven shuidouchi samples was analyzed and BAs degradation strains were selected from samples with low BAs content. The selected strains effectively controlled the BAs concentration and improved the antioxidant ability and nutrient content of fermented shuidouchi. These findings suggest that the screened strains have the potential for producing high quality shuidouchi.

Effects of the addition of leucine on flavor and quality of sausage fermented by Lactobacillus fermentum YZU-06 and Staphylococcus saprophyticus CGMCC 3475

Summary: This study investigated the effects of mixed-starter culture and addition of leucine on the flavor and quality of fermented sausages. The results showed that the mixed starter group improved the texture, bacterial counts, peptide content, volatile compounds, and sensorial scores of sausages. Furthermore, adding 3 mM leucine enhanced the content of 3-methylbutanal and overall flavor of fermented sausages.

Summary: Indonesian salted-boiled fish (pindang) is a popular traditional food in Indonesia, however, it can cause histamine fish poisoning. This study found that treating and storing mackerel with 6% NaCl at 10-15℃ can prevent the growth of K. aerogenes strain TI24 and the formation of toxic levels of histamine.

Study on microbial community and physicochemical properties of braised chicken during processing and storage microbial community of braised chicken

Summary: High-throughput sequencing technology was used to study the microbial community dynamics of braised chicken during processing and storage. The study found that the dominant genera of microbes changed during different stages, with a decrease in microbial counts during processing and an increase during storage. After the warranty period, some microbial counts and certain indicators exceeded the limits for cooked meat products. Pseudomonas, Enterobacter, and Aeromonas may be the main microorganisms causing spoilage of braised chicken.

Effects of hot or cold boning on the freshness and bacterial community changes of lamb cuts during chilled storage

Summary: In this study, the effects of different deboning methods on freshness and bacterial changes of lamb cuts stored at 4°C were examined. The results showed that the very fast chilling and boning method significantly decreased the freshness of lamb, while the hot boning and conventional chilling and boning methods had relatively minor effects. Additionally, the dominant bacterial species varied over time during lamb spoilage.
