Bacterial community development and diversity during the first year of production in a new salmon processing plant

Summary: This study aimed to identify dye degrading bacteria from textile wastewater and environmental water samples, and the results showed that the ratio of dye-degrading bacteria in textile water samples was 27%, with Citrobacter spp., Klebsiella spp., Enterobacter spp., Pseudomonas spp., and Aeromonas spp. being the most identified genera. The microbial communities in textile wastewater and environmental samples were similar at the phylum level but had differences at the genus and species levels due to different environmental conditions.

Characterization of the core microflora and nutrient composition in packaged pasteurized milk products during storage

Summary: This study investigated the microbial communities and changes in nutritional composition of packaged pasteurized milk products stored at different temperatures. The dominant microbiota in pasteurized milk included 6 phyla and 44 genera. Analysis of the nutritional composition revealed changes in free amino acids, taste values, and chemical constituents. The core functional microbiota, including Pseudomonas, Aeromonas, Paenibacillus, and Serratia genera, significantly affected the nutritional composition of pasteurized milk. These results provide a comprehensive understanding of the safety and shelf-life of stored pasteurized milk.

Effects of several commercial or pure lactic acid bacteria inoculants on fermentation and mycotoxin levels in high-moisture corn silage

Summary: This study examined the effects of three commercial lactic acid bacteria (LAB) inoculants and six single strains of LAB on fermentation and levels of aflatoxins and other mycotoxins in high-moisture corn silage. The results showed that different inoculants had an impact on the fermentation of the silage and its contamination by mycotoxins, but had no effect on levels of aflatoxins.

The antimicrobial efficacy of the pads was maintained throughout the storage period.

The results showed that LAB suppressed the growth of L. monocytogenes during simultaneous fermentation and drying. A competition model was developed to accurately predict the growth of both LAB and L. monocytogenes in this process. This is important for improving the safety of semi-dry and dry fermented meat sausages.

Recent studies have shown that bread/steamed bread made with sourdough LAB produces more aromatic compounds, demonstrates higher antifungal and acrylamide-lowering activities, and possesses greater nutritional value compared to foods fermented solely with yeast. Additionally, specific LAB species like Pediococcus pentosaceus and Fructilactobacillus sanfranciscensis are highlighted for their performance in fermentation and their important role within a complex microbial community.
