Physical and enzymatic modifications of starch from blue highland barley and their characterizations, digestibility, and lipolysis inhibitory activities

Efficient Accumulation of Amylopectin and Its Molecular Mechanism in the Submerged Duckweed Mutant

Summary: Large-scale use of fossil fuels has led to the increasingly severe problem of environmental pollution. Development and utilization of renewable energy is an effective solution. Duckweed has the characteristics of fast growth, high starch content, and no occupation of arable land, making it a promising starchy energy plant. A new submerged duckweed mutant (sub-1) with abundant starch accumulation was obtained. The mutant exhibited significant changes in starch branching degree, chain length distribution, crystal structure, and physical properties compared to the wild type. Metabolome and transcriptome analysis revealed the molecular mechanisms underlying the efficient accumulation of amylopectin in the sub-1 mutant. The study provides theoretical guidance for the creation of crop germplasm with high amylopectin content using synthetic biology in the future.

Verification of autoclaving-cooling treatment to increase the resistant starch contents in food starches based on meta-analysis result

Characterization of Volatile Compounds by HS-GC-IMS and Chemical Composition Analysis of Colored Highland Barley Roasted at Different Temperatures

Summary: This study analyzed the volatile fingerprints of colored highland barley (CHB) roasted at different temperatures using E-nose and HS-GC-IMS. The results showed that roasting changed the volatile smells, color, and composition of CHB. Pyrazines were identified as the markers for roasted CHB (RCHB). The volatiles could easily distinguish between raw CHB and RCHB, but not between CHB roasted at different temperatures. Roasting also caused changes in color characteristics and CHB constituents, with variations depending on the cultivar.

Physicochemical properties and in-vitro digestibility studies of microwave assisted chemically modified breadfruit (Artocarpus altilis) starch

Summary: Chemical modifications including citrification, acetylation, and phosphorylation were performed on breadfruit starch using microwave-assisted and chemical processes. The modified starches showed improved physicochemical properties, decreased starch hydrolysis rate and glycemic index, with microwave-assisted chemically modified starch showing the best functional properties. The study suggests that modification of breadfruit starch can enhance its utilization for industrial and nutritional purposes.
