Quality characteristics, texture properties and moisture migration of fresh brown rice noodles under different storage and temperatures conditions

Summary: This study investigated the quality characteristics of fresh brown rice noodles (FBRN) stored at different temperatures. The hardness of FBRN increased with storage time, while pH and moisture content decreased. FBRN stored at 4 degrees C had higher hardness after cooking and a more intact microstructure. The temperature had a significant influence on the water absorption rate and cooking loss rate of FBRN.

This review discusses the changes in starch properties and the mechanism of polysaccharide action on starch after modification.

Effect of Fructooligosaccharides on Retrogradation of Instant Rice

Summary: It has been found that pretreating instant rice with fructooligosaccharides can reduce the hardness of rice, effectively restrict the mobility of water molecules, and reduce the crystallinity and retrogradation enthalpy of starch. Therefore, it has the potential to delay retrogradation of rice products and improve their storage quality.

Soluble soybean polysaccharide films containing in-situ generated silver nanoparticles for antibacterial food packaging applications

Summary: A study was conducted to fabricate antibacterial soluble soybean polysaccharide (SSPS)-based nanocomposite films containing silver nanoparticles (AgNPs) for food packaging applications. The presence of AgNPs improved the thermal stability and UV light barrier property of the SSPS films, showing excellent inhibition activity against different types of bacteria and extending the shelf life of green grapes in heat-sealed packaging pouches.

Summary: The thermal decomposition behaviors of rice and corn were investigated, revealing that corn has higher initial degradation and end temperatures as well as greater mass loss compared to rice. The lower average activation energy (Ea) of rice compared to corn indicates that rice is easier to pyrolyze. The predicted values using kinetic parameters show good agreement with experimental data.
