Protective effect of kaempferol against cognitive and neurological disturbances induced by D-galactose and aluminum chloride in mice

He Lin et al.

Summary: In this study, kaempferol was found to significantly improve learning and memory in D-galactose/AlCl3-treated mice with cognitive and neurological disturbances. It reduced brain oxidative stress and inflammation, increased antioxidant activity, and regulated the brain signaling pathway. Kaempferol also affected neurotransmitter levels and altered several metabolic pathways. Overall, this research confirms the neuroprotective effect of kaempferol and its potential as a nutraceutical agent for cognitive and neurological dysfunction.

Novel Prosopis juliflora leaf ethanolic extract coating for extending postharvest shelf-life of strawberries

Iman Saleh et al.

Summary: The study found that the Prosopis juliflora water-soluble leaf ethanolic (PJ-WS-LE) extract coating can effectively extend the shelf-life of strawberries, particularly when embedded in 1% chitosan. This coating can delay spoilage-related symptoms of strawberries and maintain good storage quality parameters, including sensory characteristics, firmness, and total soluble solids levels.

Mesquite (Prosopis juliflora) grain flour: New ingredient with bioactive, nutritional and physical-chemical properties for food applications

Atacy Maciel de Melo Cavalcante et al.

Summary: This article investigated the properties and composition of mesquite flour under different drying temperatures. The results showed that the flour dried at 60 degrees Celsius had the best water and oil absorption capacity, antioxidant activity, and total phenolic compounds. This confirms the potential of mesquite flour as a source of proteins and phenolic compounds in food products.

Legumes as a sustainable source of protein in human diets

Richard D. Semba et al.

Summary: Dietary protein production from animal sources contributes significantly to greenhouse gas emissions, water use, and deforestation. Legumes, as a rich and sustainable protein source, have the potential to replace animal protein in the human diet. Challenges to increasing legume consumption include crop yield fluctuations and lower profitability compared to other crops, but greater investment in legume breeding and consumer awareness could facilitate a shift towards legumes as a major protein source in the future.

Carbohydrates: Separating fact from fiction

Ellen E. Blaak et al.

Summary: The role of carbohydrates in a healthy diet has been controversial due to limitations in studies on dietary recall and the inability to differentiate between different types of carbohydrates. Research shows that high sugar and refined carbohydrate intake have negative effects on cardiometabolic health, while diets high in dietary fiber and whole grains are beneficial. Evidence suggests that low fat and low carbohydrate diets have similar effects on body weight, and that types of carbohydrates, like fiber and whole grains, play a critical role in cardiovascular outcomes.
