Effects of microbial transglutaminase on textural, water distribution, and microstructure of frozen-stored longtail southern cod (Patagonotothen ramsayi) fish mince gel

Summary: This study used microbial transglutaminase (MTGase) to improve the quality of frozen-stored fish mince gel products. The addition of MTGase increased the gel strength, hardness, and denseness of the gel product. Particularly at 300 U/kg, MTGase significantly improved the quality of frozen-stored fish mince gel.

Different Thermal Treatment Methods and TGase Addition Affect Gel Quality and Flavour Characteristics of Decapterus maruadsi Surimi Products

Summary: Different thermal treatment methods significantly influenced the gel characteristics and flavor profiles of Decapterus maruadsi surimi products. Boiling, steaming, and frying resulted in dense gel structures with complex flavor profiles. Back-pressure sterilization and frying accelerated chemical reactions for flavor formation, while roasting, microwaving, and frying had lower moisture content leading to looser gel structures. TGase addition improved gel quality, especially in roasting, and enhanced aldehyde content in frying. Overall, boiling and steaming consistently showed better gel quality in all aspects.

In vivo and in vitro aroma release in surimi gel with different cross-linking degrees by proton transfer reaction-mass spectrometry

Summary: Transglutaminase-induced cross-linking can regulate the aroma release of surimi gels by affecting the concentrations and release rates of aroma compounds, with harder gels releasing fewer aroma compounds. Increasing cross-linking degrees first decrease, then significantly increase the release of aroma compounds, showing a negative correlation with the springiness and gel strength of surimi gels.

Insight into the mechanism of myosin-fibrin gelation induced by non-disulfide covalent cross-linking

Summary: This study investigated the mechanism of non-disulfide covalent cross-linking between myosin and fibrin. The addition of transglutaminase to myosin-fibrin gels significantly improved their textural properties, rheology properties, water holding capacity, and structural transition from alpha-helix to beta-sheet. High levels of epsilon-(gamma-glutamyl)lysine cross-linking resulted in myosin-fibrin gels with a dense gel network structure. Liquid chromatography-tandem mass spectrometry identified Lys1085 of myosin heavy chain as the site of non-disulfide covalent binding to Gln195 of fibrinogen.

Gel & three-dimensional printing properties of sheep plasma protein-surimi induced by transglutaminase

Summary: The present study investigated the effects of transglutaminase (TGase) on the rheological, 3D printing, textural properties, water holding capacity, water distribution, and secondary structures of sheep plasma protein-surimi gels. The results showed that the addition of TGase improved the printing properties, increased gel hardness, springiness, chewiness, and gel strength. TGase also increased the water holding capacity of the printed gel and affected its secondary structure as analyzed by Raman spectroscopy. Overall, TGase effectively improved the 3D printability and gel properties of the sheep plasma protein-surimi gel.

Gelling properties and microstructure of the silver carp surimi treated with pomegranate (Punica granatum L.) peel extract

Summary: The effects of ethanolic extracts of pomegranate peel (PPE) on the gelling and textural characteristics of silver carp surimi gel were investigated. The results showed that adding 0.45% of PPE can improve the gel strength and texture properties of the surimi gel, and it also increased the number of hydrogen bonds and hydrophobic interactions. The FT-IR analysis and SEM images supported these findings.

Proanthocyanidin B2 and transglutaminase synergistically improves gel properties of oxidized myofibrillar proteins

Summary: This study investigated the effects of Proanthocyanidin B2 (PCB2) and transglutaminase (TGase) on the gel properties of myofibrillar protein (MP). The results showed that the addition of TGase and PCB2 increased the hydrophobicity and water holding capacity of MP, and also caused changes in its secondary and tertiary structures. Microscopic and nuclear magnetic resonance analysis revealed that the addition of TGase and PCB2 resulted in the formation of a dense MP network structure and reduced the amount of free water.
