Production of egg white hydrolysate by digestion with pineapple bromelain: optimization, evaluation and antioxidant activity study

Summary: Chicken egg white protein hydrolysate produced using pineapple bromelain showed significant antioxidant activity, with strong scavenging activities against DPPH, ABTS, peroxyl and superoxide radicals. The integrity of the protein structure was confirmed through gel filtration chromatography, SDS-PAGE and FTIR analysis. These results suggest that the bioactive WEWPH could be a promising ingredient in health food and nutraceuticals.
