Application of egg white hydrolysate (EWH) to improve frothing functionality of pasteurized liquid egg in large quantity production

Ping-Hsiu Huang et al.

Summary: This study aimed to confirm the feasibility of applying 1% egg white hydrolysate (EWH) for simultaneous evaluation and shelf life of batch production of Sterilized Liquid Eggs (SLE). The results showed that adding 1% EWH improved foam stability, viscosity, and foam bubble size distribution in the microstructure. No Salmonella infection was found during the 7-day shelf life. Spoon cookies produced with 1% EWH in large quantity SLE achieved the highest overall acceptability, with similar physical characteristics to non-sterilized liquid egg white (NSLE). This study conveys a positive assessment to SLE producers and potential users.

Antioxidant properties of Klunzinger's mullet (Liza klunzingeri) protein hydrolysates prepared with enzymatic hydrolysis using a commercial protease and microbial hydrolysis with Bacillus licheniformis

Sana Rabiei et al.

Summary: The antioxidant activity of Klunzinger's mullet muscle hydrolysates obtained through Bacillus licheniformis fermentation and enzymatic hydrolysis was determined, showing higher free radical scavenging activity and metal chelating ability. These hydrolysates also exhibited a reduction in oxidative stress biomarkers in rats and increased total antioxidant capacity while decreasing malondialdehyde, nitric oxide, and liver enzyme levels.

Development of functional ice cream with egg white hydrolysates

M. I. Lopez-Martinez et al.

Summary: Ice cream is a popular frozen dessert around the world, but there is a declining demand for dairy products, leading to interest in dairy-free alternatives such as functional ice cream made from egg white hydrolysate. This research found that egg white hydrolysate-based ice cream could be a healthy option for specific populations like lactose intolerants or individuals with milk allergies.

Dietary egg white protein hydrolysate improves orotic acid-induced fatty liver in rats by promoting hepatic phospholipid synthesis and microsomal triglyceride transfer protein expression *

Zhe Jiang et al.

Summary: The study revealed that egg white protein hydrolysates (EWH) have a significant improvement on nonalcoholic fatty liver (NAFL) in rats, with EWH reducing liver triacylglycerol (TAG) levels more effectively and rapidly compared to egg white protein (EWP). EWH also promoted hepatic TAG secretion, showing a potential therapeutic effect on NAFL induced by orotic acid (OA).

Improvement of Foaming Characteristics and Stability of Sterilized Liquid Egg with Egg White Hydrolysate (EWH)

Hen-Yo Ho et al.

Summary: This study investigated the effects of egg white hydrolysate (EWH) on pasteurized liquid egg properties, showing that adding 1% of EWH can improve various properties of the sample while maintaining the cake structure and appearance acceptable to consumers. The hydrolyzation process resulted in up to 30.1% of EWH, demonstrating its potential for efficient use in the baking industry.
