Acids in coffee: A review of sensory measurements and meta-analysis of chemical composition

Summary: This study conducted a systematic review and meta-analysis on the concentrations of organic acids (OAs) and chlorogenic acids (CGAs) in different types of coffee at various roast levels. The results showed that roasted robusta coffee contained more acidic compounds than arabica, and the concentration of CGAs decreased as the roasting level increased. Moreover, the increase in certain OAs with roast level might play a significant role in the sensory profile of dark roast coffees.

Summary: This study examined how total dissolved solids, percentage extraction yield, and brew temperature influenced consumer acceptance of medium roast, single-origin coffee, and identified two consumer preference segments that were most strongly affected by total dissolved solids. The findings suggest a need to reconsider the Coffee Brewing Control Chart to reflect consumer preference segmentation.

An equilibrium desorption model for the strength and extraction yield of full immersion brewed coffee

Summary: The sensory qualities of brewed coffee are strongly correlated with the total dissolved solids (TDS) and extraction yield (E), which can be predicted using a pseudo-equilibrium desorption approach for full immersion brewing. The study found that TDS is inversely proportional to the water/coffee mass brew ratio, while E is independent of the brew ratio, with E around 21% over a wide range of brew ratios. Additionally, the standard oven-drying method for measuring E was found to underestimate the true value at equilibrium due to retained brew within the spent moist grounds, and the equilibrium constant K was shown to be insensitive to grind size, roast level, and brew temperature.

Consumer Choices and Habits Related to Coffee Consumption by Poles

Summary: Through a study of 1500 adult respondents in Poland using the computer-assisted web interviewing (CAWI) method, three main groups of coffee consumers were identified: Neutral coffee drinkers, Ad hoc coffee drinkers, and Non-specific coffee drinkers. The research indicates that Polish coffee consumers prefer traditional brewing methods but are also open to new sensory experiences.
