Establishment of quality evaluation method for frozen tilapia (Oreochromis niloticus) fillets stored at different temperatures based on fractal dimension

Summary: This study aimed to explore an effective quality evaluation system based on microstructure changes. By observing the preservation of tilapia samples at different temperatures, it was found that fractal dimension (FD) was more feasible for quality evaluation. Traditional quality parameters showed a good correlation with FD. Additionally, the developed kinetic model demonstrated the feasibility and accuracy of quality evaluation based on FD.

Role of freezing-induced myofibrillar protein denaturation in the generation of thaw loss: A review

Summary: The denaturation of myofibrillar proteins plays a crucial role in the formation of thaw loss during freezing-thawing process of meat. The decrease in pH and increase in ionic strength in the unfrozen water during freezing are hypothesized to cause protein denaturation and conformational changes, leading to loss of water-holding capacity. Slow freezing results in more thaw loss compared to fast freezing, indicating the impact of freezing rate on myofibrillar protein denaturation.
