This study investigated the changes of characteristic sugar, fatty acid, organic acid, and amino acid in jujubes at different dry mature stages. Results showed significant effects of dry mature stages on the content of sugar, fatty acid, organic acid, and amino acid in jujubes. Additionally, jujubes at different dry mature stages could be distinguished by principal component analysis based on their sugar, fatty acid, organic acid, and amino acid profiles.
