Effect of boiling and roasting on phenolic components and their bioaccessibilities of highland barley

Ben Wang et al.

Summary: This study investigated the effects of boiling and roasting on the phenolic compounds in highland barley. Both treatments improved the extractability and antioxidant activity of the phenolics. In-vitro digestion showed that the treated barley had higher bioaccessibility of phenolics, with boiling samples having higher bioaccessibility than roasted samples.

Different thermal treatments of highland barley kernel affect its flour physicochemical properties by structural modification of starch and protein

Haoran Wang et al.

Summary: In this study, the effects of superheated steam (SS) and traditional heating methods on Highland barley (HB) were compared. The results showed that SS treatment improved the physiochemical properties of HB, including reducing gelatinization enthalpy, increasing the degree of gelatinization, delaying starch retrogradation, and changing the secondary structure of proteins.

Effect of thermal processing on the molecular, structural, and antioxidant characteristics of highland barley β-glucan

Yi-Peng Bai et al.

Summary: The study revealed that heat fluidization had the greatest impact on the extractability and purity of beta-glucan in highland barley. Thermal processing reduced the molecular weight and transformed the molecular morphology, while enhancing the thermal stability and antioxidant activity of beta-glucan.

Highland barley tea represses palmitic acid-induced apoptosis and mitochondrial dysfunction via regulating AMPK/SIRT3/FoxO3a in myocytes

Chenzhipeng Nie et al.

Summary: This study investigated the protective effects and potential mechanisms of water-soluble (WS) and alcohol-soluble (AS) extracts of highland barley tea on PA-induced apoptosis and mitochondrial dysfunction in C2C12 myocytes. The results showed that AS had stronger antioxidant activity and could reduce oxidative damage induced by PA.
