Specification and Simplification of Analytical Methods to Determine Wine Color

Summary: The color of wine is an important quality parameter for consumers, but measuring it is often difficult for winemakers due to the expensive and bulky equipment required. This study investigated the influence of photometer settings on color determination and compared the Glories system and the CIE L*a*b* system. It was found that photometer settings affect the reproducibility of color determination, and the Glories system does not correlate with the CIE L*a*b* system in all wines and provides less information about wine color. The study also proposed a method to calculate CIE L*a*b* coordinates using a portable analysis system, which could benefit winemakers in measuring color.
