In-silico investigation of umami peptides with receptor T1R1/T1R3 for the discovering potential targets: A combined modeling approach

Wenli Wang et al.

Summary: This study analyzed the sequence and properties of umami peptides, and investigated their active sites and binding residues with the receptor T1R1/T1R3. The results identified the key active sites as well as the crucial residues in the receptor that bind umami peptides. A decision rule was proposed to predict potential umami peptides, providing convenience and efficiency.

Visualization of vibrational spectroscopy for agro-food samples using t-Distributed Stochastic Neighbor Embedding

Na Luo et al.

Summary: This study demonstrated the effectiveness of t-SNE in visualizing vibrational spectroscopy data sets, showing better visual discrimination results in 2-dimensional space and higher clustering metric scores compared to PCA and Isomap. The supervised classification models based on the new representations from t-SNE outperformed other methods in terms of accuracy, indicating great potential of t-SNE for recognizing minute spectral differences between classes.

COCONUT online: Collection of Open Natural Products database

Maria Sorokina et al.

Summary: Natural products (NPs) are bioactive small molecules produced by living organisms, sparking global interest in NP research. Despite the existence of multiple NP databases, there is currently no resource that aggregates all known NPs in one place, which would greatly simplify research.

Rapid visualized characterization of phenolic taste compounds in tea extract by high-performance thin-layer chromatography coupled to desorption electrospray ionization mass spectrometry

Chen Tang et al.

Summary: In this study, phenolic compounds in tea extracts were separated and determined using HPTLC and DESI-MS, with 44 compounds accurately confirmed. The clustering results of heat-map showed significant differences in phenolic compounds among different categories of teas. Additionally, the content of hydrolyzable tannins was found to be positively correlated with the grades of green tea.
