Effects of different moisture contents on the structure and properties of corn starch during extrusion

Summary: In this study, corn starch samples with different moisture contents were prepared by twin-screw extrusion, and it was found that increasing moisture content led to a decrease in starch crystallinity and orderliness. Gluten-free quinoa noodles: effects of intermediate moisture extrusion and soy protein isolates supplement on cooking quality and in vitro digestibility

Summary: In this study, gluten-free quinoa noodles (GFQNs) with improved texture and cooking quality were produced using twin-screw extrusion. The addition of soy protein isolate (SPI) reduced cooking loss, increased hardness, and formed a more porous structure in the noodles. Furthermore, SPI addition also delayed starch digestion rate.

Characterisation of instant mung bean vermicelli quality using microwave vacuum and microwave continuous drying

Summary: The production of good quality instant mung bean vermicelli was studied using microwave vacuum drying and microwave continuous drying. Microwave vacuum drying resulted in larger and more porous vermicelli compared to microwave continuous drying. Vermicelli dried at 30 W g(-1) had the shortest rehydration time and the best cooking quality. Microwave drying also affected the color attributes of the vermicelli. The tensile strength of the vermicelli products did not vary significantly, but the commercial vermicelli showed higher elasticity. Interestingly, the vermicelli dried at 22.5 and 30 W g(-1) had higher acceptability ratings compared to commercial vermicelli on a hedonic scale. In conclusion, microwave vacuum drying is advantageous in producing instant mung bean vermicelli due to its short drying and rehydration times and high acceptability of the final product.
