Preparation of ultra-long stable ovalbumin/sodium carboxymethylcellulose nanoparticle and loading properties of curcumin

Summary: OVA/CMC nanoparticles are prepared using complex coacervation and thermal induction, and the effects of different parameters on their stability, loading mechanism for curcumin, and functional properties are investigated. The results show that these nanoparticles can efficiently load and stabilize curcumin, exhibiting good antioxidant activity.
