Identification of odor compounds and odor-active compounds of yogurt using DHS, SPME, SAFE, and SBSE/GC-O-MS

Summary: This study extracted odor compounds of yogurt through four methods and identified a total of 117 odorants, among which 31 were perceived as odor-active compounds. The DHS method showed the most outstanding extraction effect, with 13 volatile compounds characterized as key odor-active compounds.

Identification and source analysis of volatile flavor compounds in paper packaged yogurt by headspace solid-phase microextraction-gas chromatography-mass spectrometry

Summary: Headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC-MS) was used to analyze volatile flavor compounds of yogurt packaged in carton. Volatile flavor compounds of off-flavor yogurt were compared with that of fresh milk, unpackaged yogurt, non-off-flavor yogurt, and its packaging materials. The migration assay combined with VIP values showed that ethanol and ethyl acetate can be considered as the other indicators for the monitoring of yogurt quality.

Distinction of volatile flavor profiles in various skim milk products via HS-SPME-GC-MS and E-nose

Summary: The study developed a correlative analysis protocol for the identification and differentiation of volatile flavor components in various skim milk products using multivariate statistical analysis and electronic nose technology. Significant differences were observed among the six skim milk products in both volatile flavor composition and aroma release distribution. The results of partial least squares regression indicated that the combination of HS-SPME-GC-MS and E-nose technology has potential for evaluating the flavor profile of skim milk products efficiently.
