Protective effect of antioxidant peptides from grass carp scale gelatin on the H2O2-mediated oxidative injured HepG2 cells

Summary: The antioxidant peptides from grass carp scale gelatin have a protective effect on H2O2-mediated oxidative injured HepG2 cells, which could be attributed to the increase in SOD, CAT, and GPX activities, decrease in ROS level and MDA content, as well as reduced damage on cell membrane and DNA. The peptide sequences of grass carp scale gelatin hydrolysates were mainly low molecular weight peptides, and the synergistic effect among them contributed to the strong antioxidant activities.

Thermo-mechanical response of liquid-core beads as affected by alginate molecular structure

Summary: Core-shell hydrogel beads have been increasingly studied due to their exciting texture and functional properties, but the thermal processing of these beads remains a challenge. In this study, liquid core gel beads were prepared from alginate with different molecular weights and M/G ratios. The results showed that the core and shell of the beads had a significant influence on their heat response. High G-content and high molecular weight contributed to improved mechanical properties of the beads at high temperatures. However, above the boiling point, the beads started to lose their original shape and the shell thickness was irregularly reduced. The water state and crosslinking of the chains were found to be the decisive factors for the beads' thermo-mechanical response. The study established a relationship between the beads' structural integrity, stability, and alginate's molecular composition during thermal treatment.

Analysis of the interaction between cyanidin-3-O-glucoside and casein hydrolysates and its effect on the antioxidant ability of the complexes

Summary: The study found that the interaction between cyanidin-3-O-glucoside and casein or casein hydrolysates is mediated by different forces, forming hydrogen bonds or hydrophobic interactions. After binding with cyanidin-3-O-glucoside, a slight change in the secondary structure of casein/casein hydrolysates was observed, leading to the formation of larger particles. The antioxidant activity assessments showed a synergistic or antagonistic effect between casein/casein hydrolysates and cyanidin-3-O-glucoside.

Effect of preheated milk proteins and bioactive compounds on the stability of cyanidin-3-O-glucoside

Summary: The study found that both native and preheated milk proteins had significant protective effects on C3G, with the best protection observed in WPI preheated at 85 degrees Celsius under neutral conditions. The addition of vitamin C into the protein-anthocyanin solutions accelerated the color loss of C3G, while EGCG and gallic acid improved its thermal stability. Among the bioactive compounds, gallic acid provided the most significant protective effect on C3G, reducing its thermal degradation rate by 44.6%.
