UHT treatment and storage of liquid infant formula affects protein digestion and release of bioactive peptides

Summary: Infant formulas were subjected to various UHT treatments and storage conditions, with protein aggregation correlated with thermal treatment and limited protein digestion observed after pepsin treatment. Beta-lactoglobulin and alpha-lactalbumin remained undigested in certain treatments, with enhanced digestion observed after storage. LC-MS/MS analysis showed limited proteolysis and increased peptide numbers during digestion, with bioactive peptides containing DPP-IV and ACE inhibition properties.
