Dynamic changes of volatile and phenolic components during the whole manufacturing process of Wuyi Rock tea (Rougui)

Black tea aroma formation during the fermentation period

Summary: The present study systematically investigated the formation of black tea aroma during the fermentation period. It identified 158 volatile compounds and found that most amino acid-derived volatiles (AADVs) and carotenoid-derived volatiles (CDVs) increased significantly, while fatty acid-derived volatiles (FADVs) and volatile terpenoids (VTs) displayed diverse changes. The study also revealed the degradation of fatty acids, amino acids, carotenoids, and glycosidically bound volatiles (GBVs) to form aroma components. The intensity of green scent decreased while the intensities of sweet and floral/fruity scents increased and gradually dominated the aroma of tea leaves. AADVs and CDVs were shown to contribute more to the formation of sweet and floral/fruity scents than VTs.

The investigation on the characteristic metabolites of Lactobacillus plantarum RLL68 during fermentation of beverage from by-products of black tea manufacture

Summary: Lactic acid bacteria fermentation is an effective strategy to improve flavor, nutritional value, and shelf-life of fermented foods. This study produced fermented tea beverages using the by-products of tea manufacture and evaluated their composition and sensory quality. The results showed that the fermentation process utilized glucose, fructose, mannose, and xylose as carbon sources, leading to a variation in aromatic substances and imparting sweet and fruity odors to the beverages. The fermented beverages also exhibited enhanced sensory qualities, elevated levels of organic acids and GABA, and decreased levels of bitter amino acids, tea polyphenols, and L-theanine.

Odorant-Binding Protein 1 Plays a Crucial Role in the Olfactory Response of Bemisia tabaci to R-Curcumene

Summary: The whitefly Bemisia tabaci shows innate avoidance to the naturally produced compound R-curcumene by wild tomato S. habrochaites. The odorant-binding protein 1 of B. tabaci (BtOBP1) exhibits specific binding activity to R-curcumene and a single amino acid mutation in BtOBP1 results in decreased binding affinities to R-curcumene. Knock-down experiment with BtOBP1 impairs whitefly responses to R-curcumene, illustrating the crucial role of BtOBP1 in the perception and discrimination of R-curcumene.

Elucidation of the Regular Emission Mechanism of Volatile β-Ocimene with Anti-insect Function from Tea Plants (Camellia sinensis) Exposed to Herbivore Attack

Summary: This study found that beta-ocimene interferes with the growth of tea geometrids through signaling and that light is a key factor in the regular emission of beta-ocimene induced by tea geometrids. The beta-ocimene synthase was located in plastids and was found to catalyze the formation of beta-ocimene in overexpressed tobacco. The expression patterns of CsBOS1 and CsABCG in tea leaves attacked by tea geometrids suggest that these two genes may regulate the regular emission of beta-ocimene induced by insect attack in tea plants.
