Maillard reaction of food-derived peptides as a potential route to generate meat flavor compounds: A review

Ao Sun et al.

Summary: Plant-based meat analogues (PBMA) are a promising solution to the global meat supply and demand imbalance, with flavor being a crucial factor in consumer acceptance. The Maillard reaction is a natural way to generate meat-like flavor compounds, which has significant applications in PBMA formulations.

Effect of beef tallow, phospholipid and microwave combined ultrasonic pretreatment on Maillard reaction of bovine bone enzymatic hydrolysate

Zhiliang Zheng et al.

Summary: The study found that MUP enhances the Maillard reaction but also results in more hydrophobic amino acids in MRPs; adding phospholipids significantly increases the content of volatile compounds in MRPs, especially sulfur compounds; beef tallow encapsulation has no significant impact on the sensory characteristics of MRPs, while adding phospholipids after MUP and beef tallow encapsulation can enhance the saltiness and umami of MRPs, reduce astringency.

Effect of marinating and frying on the flavor of braised pigeon

Min Qian et al.

Summary: The study investigated the effects of marinating and frying on the flavor of pigeon meat during the production process of braised pigeon. Through the analysis of volatile components using SPME-GC-MS and GC-IMS, it was found that the heat-processing of braised pigeon led to an increase in volatile substances, mainly from Maillard reaction. Unique volatile components such as pentanal, methional, 3-methylbutanal, and ethyl acetate were detected by GC-IMS but not by GC-MS. The results provided a scientific basis for flavor analysis, process optimization, and quality standards of braised pigeon.

Effects of different sulfur-containing substances on the structural and flavor properties of defatted sesame seed meal derived Maillard reaction products

Yi Shen et al.

Summary: Plant derived proteins are widely used to produce Maillard reaction products for functional food products. Addition of cysteine, methionine, and thiamine enhances antioxidant activity and flavor intensity of MRPs derived from sesame seed meal. These MRPs contain higher sulfur compounds and free amino acids, resulting in stronger meat flavor and improved flavor characteristics and physicochemical properties.

Taste improvement of Maillard reaction intermediates derived from enzymatic hydrolysates of pea protein

Xue Zhou et al.

Summary: The Maillard reaction intermediates (MRIs) derived from enzymatic hydrolysates of pea protein, prepared at a low temperature, reduced bitterness and increased umami taste. The concentration of MRIs positively correlated with umami and saltiness intensity, making them a potential substitute for salt reduction. Increased MRIs also promoted aldosterone secretion in saliva, enhancing human perception of saltiness.

Formation of Pyrazines in Maillard Model Systems: Effects of Structures of Lysine-Containing Dipeptides/Tripeptides

Furong Wang et al.

Summary: This study investigates the formation of pyrazines from the reaction system of glucose and lysine-containing dipeptides and tripeptides in sunflower seed oil. The results show that dipeptides with lysine at the C-terminus have higher pyrazine production. Furthermore, the type and sequence of amino acids in dipeptides and tripeptides play an important role in the formation of pyrazines during oil processing.

Small Peptides Hydrolyzed from Pea Protein and Their Maillard Reaction Products as Taste Modifiers: Saltiness, Umami, and Kokumi Enhancement

Fang Yan et al.

Summary: Pea protein was used to prepare Maillard reaction products through enzymatic hydrolysis and thermal reaction, resulting in significant saltiness improvement. Low-molecular-weight pea peptides had the strongest effect on saltiness and umami enhancement, with a more pronounced effect from MRPs derived from hexoses than pentoses. The increase in saltiness was most dominant at 1 hour of thermal reaction, while further heating led to a decrease in saltiness enhancement due to reaction of small tasty peptides. Kokumi attribute was mainly contributed by MRPs of small peptides.
