Impact of heat and enzymatic treatment on ovalbumin amyloid-like fibril formation and enzyme-induced gelation

Arne M. R. Huyst et al.

Summary: Heating aqueous solutions of ovalbumin (OVA) can lead to gel formation, with transparent gels formed at acidic pH conditions. By subjecting OVA to a combined heat and enzymatic treatment, transparent gels containing long OVA fibrils can be formed. Varying the temperature and enzyme concentration can affect the speed and strength of gel formation.

Heating Wheat Gluten Promotes the Formation of Amyloid-like Fibrils

Margarita Monge-Morera et al.

Summary: The study found that heating conditions, such as slow cooking at 78 degrees for 22 h, induced the formation of short straight fibrils in wheat gluten, while boiling for at least 15 min resulted in longer straight fibrils with typical amyloid fibril characteristics. These findings suggest that heat-treated wheat gluten-containing food products may contain amyloid-like fibrils.

Formation, structural characteristics, foaming and emulsifying properties of rice glutelin fibrils

Ting Li et al.

Summary: The study found that rice glutelin fibrils (RGFs) formed under heating at acidic conditions, with optimal conditions resulting in increased fibril length and decreased particle size of rice glutelin. There was a structural rearrangement as peptides assembled into ordered fibrils through intermolecular interactions. Additionally, foaming and emulsifying properties improved during fibrillation.

Influence of hydrophobic interfaces and shear on ovalbumin amyloid-like fibril formation in oil-in-water emulsions

Arne M. R. Huyst et al.

Summary: Animal proteins are widely used in food applications due to their good technical properties, while amyloid fibrils, a distinct type of protein fibrils, have been found in processed food proteins such as heated ovalbumin. The study showed that high-shear emulsification of heated egg proteins induced amyloid-like fibril formation, leading to submicron sized droplets with superior emulsification properties.

Effect mechanism of ultrasound pretreatment on fibrillation Kinetics, physicochemical properties and structure characteristics of soy protein isolate nanofibrils

Anna Hu et al.

Summary: Ultrasound pretreatment can enhance the formation rate and reduce the particle size of soy protein isolate nanofibrils, while improving their physicochemical properties. Ultrasound promotes nanofibril formation by altering the secondary and tertiary structure of proteins, providing a potential technology for the food industry.
