Tannic acid enhanced the emulsion stability, rheology and interface characteristics of Clanis Bilineata Tingtauica Mell protein stabilised oil-in-water emulsion

Summary: In this study, Pickering emulsions were prepared using CBTMP-Tannic acid (CBTMP-TA) particles and soybean oil. The presence of TA significantly improved the stability of the emulsions and enhanced rheological properties. The interfacial behavior of the emulsions was also modified, forming a more stable interfacial layer as TA content increased. This study demonstrated the potential applications of insect protein resources in food emulsion systems.

Non-covalent interaction of soy protein isolate and catechin: Mechanism and effects on protein conformation

Summary: Understanding the interaction mechanism between proteins and polyphenols is crucial for the application of protein-polyphenol compounds in food. This study showed that non-covalent modification of soy protein isolate (SPI) with catechin resulted in aggregation and network-like structure formation. The increased catechin concentration caused SPI to become looser and more disordered, with an opened internal structure and exposed hydrophobic groups. The main forces between SPI and catechin were found to be hydrophobic interactions and hydrogen bonds.

Modulation fat globules of the plant-based cream emulsion: Influence of the source of plant proteins

Summary: After mixing procyanidin with lactoferrin, solution turbidity and intrinsic fluorescence quenching increased, while surface hydrophobicity of lactoferrin was reduced. This binding interaction led to significant changes in the structure of both polyphenol and protein, with thermodynamic analysis indicating spontaneous interaction mainly driven by entropy changes.

Effects of covalent interactions and gel characteristics on soy protein-tannic acid conjugates prepared under alkaline conditions

Summary: Covalent cross-linking of soy protein isolate (SPI-12%) with tannic acid (TA-29,58,88,117,146 mu mol/g SPI) in an alkaline environment was found to improve the structure, antioxidant activity, and gelation characteristics of SPI-TA conjugates. The addition of TA initiated irreversible SPI modifications, resulting in optimal hardness and elasticity at pH 11, and increased storage and loss moduli with higher TA concentrations. Analysis shows that higher TA concentration leads to a more compact network structure, indicating pH-dependent interactions between SPI and TA modify gel formation to enhance rheological and textural properties of the gels.
