Structural characterization of red beet fiber and pectin

Cranberry Arabino-Xyloglucan and Pectic Oligosaccharides Induce Lactobacillus Growth and Short-Chain Fatty Acid Production

Summary: This study characterized xyloglucan and pectic oligosaccharide structures from cranberry pomace and evaluated the growth and short-chain fatty acid production of Lactobacillus strains using a cranberry oligosaccharide fraction as the carbon source. The results showed that certain Lactobacillus strains have the ability to metabolize cranberry oligosaccharides and produce short-chain fatty acids, suggesting their potential as probiotics. Novel cranberry pectic and arabino-xyloglucan oligosaccharide structures were also identified, contributing to the development of health-promoting synbiotics.
