Structural and rheological properties of the clots formed by ruminant milks during dynamic in vitro gastric digestion: Effects of processing and species

Siqi Li et al.

Summary: This study examined the impact of homogenisation and heat treatment on the structural and rheological properties of gastric milk clots from sheep, goat, and cow milks during simulated gastric digestion. Overall, higher processing intensity led to more fragmented and less consistent clots with higher moisture content. The differences between species suggest variations in physicochemical properties may be responsible for the observed effects of processing treatments on clot structure.

Structural changes in milk from different species during gastric digestion in piglets

Debashree Roy et al.

Summary: This study investigated the structural and physicochemical changes during gastric digestion of milk from different species using piglets as animal models. The study found that the digestion rate and nutrient emptying rate in the stomach varied among different types of milk. These findings have implications for developing controlled digestion and nutrient delivery systems.

Milk protein coagulation under gastric conditions: A review

Thom Huppertz et al.

Summary: Milk protein coagulation plays a crucial role in both the processing and digestion of milk. Heat treatment and homogenisation of milk can lead to weaker gastric curds, while native whey proteins are not easily coagulated. Understanding gastric coagulation and digestion behavior allows for the customization of gastric transit through compositional differences or processing methods.

Physicochemical changes and age gelation in stored UHT milk: Seasonal variations

Siqi Li et al.

Summary: Physicochemical changes and age gelation during storage of indirect UHT milk produced in different seasons in New Zealand were examined. While fresh milk showed some differences in protein and calcium contents, mean particle size, and propensity for age gelation, the changes in pH, ionic calcium concentration, particle size, and protein profiles were not greatly varied during storage between seasons. Protein analysis indicated Maillard reaction and limited proteolysis occurring during storage, with heat-induced aggregation playing a role in physicochemical gelation of UHT milk.

Impact of gastric coagulation on the kinetics of release of fat globules from milk of different species

Debashree Roy et al.

Summary: The study revealed that during gastric digestion, fat globules in raw and pasteurized whole milks are initially trapped within curds, but are gradually released as digestion progresses. The release of fat globules from curds is dependent on the breakdown of the protein matrix, providing insights into controlled delivery of nutrients.
