Freeze-thaw stability and oil crystallization behavior of phospholipids/whey protein-costabilized acidic emulsions with four oil types

Summary: This study investigated the physical properties and freeze-thaw behavior of mayonnaise-like emulsions prepared from different oils and supplementary surfactants. The results showed that the addition of surfactants improved the freeze-thaw stability of the emulsions, but also reduced the emulsion stability. Among the four types of oils, the mayonnaise-like emulsion made from olive oil had the poorest freeze-thaw stability.

Complex coacervation of pea protein and pectin: Effect of degree and pattern of free carboxyl groups on biopolymer interaction

Summary: In the field of microencapsulation, there has been a growing interest in using plant-based bio-polymers for complex coacervation. This study investigated the impact of degree of methoxylation and pattern of free carboxyl groups of pectin on complex coacervation with soluble pea protein fractions. The results showed that a higher protein share enhanced protein-pectin interactions, with the optimum conditions depending on the degree of methoxylation of pectin. Pectin with a degree of methoxylation of 50% exhibited the highest level of interaction with protein, and pectin with random pattern of free carboxyl groups showed stronger interaction compared to pectin with blockwise pattern.

It is found that the complex can maintain the structural integrity and antimicrobial capacity of LF, even after thermal treatment. Ovalbumin fibril-stabilized oleogel-based Pickering emulsions improve astaxanthin bioaccessibility

Summary: The present study aimed to enhance the bioaccessibility of hydrophobic astaxanthin (AST) by developing food-grade emulsion systems. Ovalbumin (OVA) fibrils and candelilla wax-based oleogels were prepared for the next fabrication of AST-loaded oleogel-based Pickering emulsions. The obtained oleogel-based Pickering emulsions displayed ultrastability during 90-day storage and outstanding freeze-thaw stability. Furthermore, the superiority of AST-loaded oleogel-based Pickering emulsion was further reflected in the apparently ameliorative lipolysis extent and AST bioaccessibility compared with oleogel.

Application of ultrasound treatment to improve the technofunctional properties of hemp protein isolate

Summary: The hemp seed protein isolate (HPI) was extracted using alkaline extraction and acid precipitation methods. Ultrasound treatment significantly improved the solubility and emulsifying properties of HPI, accompanied by changes in particle size, surface hydrophobicity, and secondary and tertiary structures. The functional properties of ultrasound-treated HPI were better than pea protein isolate but not as good as soy protein isolate.
