Organosulfur volatile profiles in Italian red garlic (Allium Sativum L.) varieties investigated by HS-SPME/GC-MS and chemometrics

Alessandra Biancolillo et al.

Summary: The study analyzed 68 samples of red garlic from four Italian areas to investigate if volatile composition is related to geographical origin, using HS-SPME/GC-MS analysis. The PLS-DA model successfully classified most external samples, and VIP analysis identified 13 organosulfur compounds significantly dependent on the garlic flavor and the origin of the bulbs.

Isotopic signatures and patterns of volatile compounds for discrimination of genuine lemon, genuine lime and adulterated lime juices

Reza Jahani et al.

Summary: This study investigates the isotopic and VOCs fingerprinting of genuine lemon and lime juices as well as adulterated lime juices to differentiate and understand the differences between them. The results show that the stable isotopes and VOCs can be effective markers for authenticity assessment. Furthermore, the study reveals the underlying mechanisms behind the differences observed. The findings suggest that further investigation is needed to confirm and expand on these promising results.

Spectroscopic fingerprinting and chemometrics for the discrimination of Italian Emmer landraces

Martina Foschi et al.

Summary: This study focuses on developing a nondestructive method to distinguish three Italian landraces of emmer and laying the groundwork for a possible authentication method. By analyzing 147 emmer samples harvested from different areas using spectroscopy, different PLS-DA methods and data fusion strategies were utilized to find the most accurate classification model, providing a reference for geographical origin identification.

Valorisation of carrot peel waste by water-induced hydrocolloidal complexation for extraction of carote and pectin

Nagarajan Jayesree et al.

Summary: Carrot peel, as a source of bioactive compounds, can be effectively valorized through the carotene-pectin hydrocolloidal complexation method for co-extracting carotenoids and pectin. This green extraction method requires fewer operating steps and results in higher antioxidant activity compared to conventional solvent extraction methods.
