Elucidating the Color of Rose Wines Using Polyphenol-Targeted Metabolomics

Cecile Leborgne et al.

Summary: The color of rose wines is influenced by polyphenols and other constituents of the wine. The salmon shade of light rose wines is primarily due to pyranoanthocyanin pigments, while the redness of intermediate color wines is related to anthocyanins and carboxypoyranoanthocyanins. The redness of dark rose wines is caused by the products of anthocyanin reactions with flavanols, and the yellowness is associated with oxidation.

Different Wines from Different Yeasts? Saccharomyces cerevisiae Intraspecies Differentiation by Metabolomic Signature and Sensory Patterns in Wine

Fanny Bordet et al.

Summary: This study found significant chemical composition and sensory differences in wines produced by different yeast strains, which are mainly influenced by nitrogen metabolism. The combination of metabolomics, volatile compounds analysis, and sensory evaluation can provide detailed insights into these differences.

Non-targeted metabolomic approach as a tool to evaluate the chemical profile of sparkling wines fermented with autochthonous yeast strains

Maria Tufariello et al.

Summary: The study demonstrates that native selected yeast strains can impact the chemical profile of sparkling wines, including levels of fermentative compounds, polysaccharides, organic acids, phenolic acids, and lipids. A correlation analysis using HPLC-HRMS/GC-MS techniques revealed a map that serves as a useful tool for monitoring various aroma release patterns. This research provides valuable insights for enhancing the quality of regional sparkling wines made from minor indigenous grape varieties by utilizing selected microbial resources.
