Risk categorisation of poultry abattoirs on the basis of the current process hygiene criteria and indicator microorganisms

Summary: This study investigated the usefulness of testing for pathogens and indicator microorganisms for risk categorisation of poultry abattoirs in Serbia. The results showed that indicator microorganisms have greater value for risk categorisation of abattoirs, while there may be differences in risk categorisation for pathogens. Further investigation and standardisation of risk categorisation based on aerobic colony count, Enterobacteriaceae count and/or Escherichia coli count are warranted.
