Contrasting summer versus winter dynamic microbial communities and their environmental driving factors in the solid-state saccharification process of Fuyu-flavor Baijiu

Jiamu Kang et al.

Summary: This study used high-throughput sequencing to investigate the differences in microbial community dynamics during the saccharification process of Fuyu-flavor Baijiu in winter versus summer, and explored the driving effects of environmental variables on microbial succession. The results showed that temperature was the key factor driving the succession of bacterial community, while pH was the main factor driving the succession of dominant fungi.

Summary: Through high-throughput sequencing, this study identified the succession of microbial communities at different stages of baijiu production, as well as their relationship with physiochemical factors and flavor substances. Moisture, ethanol, and acidity were identified as key factors affecting microbial succession, with three yeasts and bacteria changes during fermentation closely related to the formation of flavor substances.

Effect of oxygen availability and pH on adaptive acid tolerance response of immobilized Listeria monocytogenes in structured growth media

Ifigeneia P. Makariti et al.

Summary: The study evaluated the impact of oxygen availability and sub-optimal pH on the growth and acid resistance of immobilized L. monocytogenes. Anaerobic conditions resulted in lower bacterial population, especially at lower pH, while prolonged habituation increased acid tolerance. The combined effect of oxygen availability and suboptimal pH on acid resistance varied between strains, with anoxic cultures at pH 5.5 exhibiting the lowest tolerance towards lethal acid stress.

Study on microbial communities and higher alcohol formations in the fermentation of Chinese Xiaoqu Baijiu produced by traditional and new mechanical technologies

Yuanliang Hu et al.

Summary: Microorganisms play an important role in flavor formation in Chinese Baijiu production. Studying the effects of mechanization on microbial community and flavor is crucial for Baijiu development. Metagenomic and metatranscriptomic analyses identified 5 core microorganisms in Baijiu fermentation, showing differences in microbial communities between traditional and new technologies. Initiating abundances of Saccharomyces cerevisiae and Pichia kudriavzevii were higher in traditional technology, while Lactobacillus exhibited advantages in both traditional and new technologies.
