Morphometric and Nutritional Characterization of the Main Spanish Lentil Cultivars

Summary: The study on the morphometric and nutritional characteristics of the main Spanish lentil cultivars revealed that they are large and heavy, with high levels of protein and carbohydrates and relatively high fiber content. Fat content is low, with exceptional performance in the cultivar Pardina. Calcium, iron, and magnesium levels are higher, especially in the cultivars included in the PGI Lenteja de la Armuria, showing better overall morphometric and nutritional characteristics compared to other cultivars.
