Approaching Study on the Relationship Between Saccharomyces cerevisiae Production of Tyrosol, Hydroxytyrosol, and Melatonin with Volatile Compounds in Fermented Must

Nitrogen maceration of wine grape: An alternative and sustainable technique to carbonic maceration

Summary: The study aimed to compare carbonic maceration (CM) and nitrogen maceration (NM) in terms of their effects on the concentration of polyphenols, anthocyanins, volatile organic compounds (VOCs), and other components in Gamay wines. The results showed that NM resulted in higher concentrations of polyphenols and anthocyanins compared to CM. However, CM wines had higher levels of esters and volatile medium chain fatty acids (MCFA). Electronic nose measurements revealed distinct differences among the samples, which were consistent with the results of VOCs analysis. NM showed potential as an environmentally sustainable technique for producing new styles of macerated and aromatic wines.

Metabolic engineering of Saccharomyces cerevisiae for hydroxytyrosol overproduction directly from glucose

Summary: In this study, the heterologous hydroxylase complex HpaBC from Escherichia coli was integrated into the Saccharomyces cerevisiae genome to increase the production of Hydroxytyrosol (HT). By redirecting the metabolic flux and optimizing culture conditions, the engineered strain was able to achieve a high concentration of approximately 375 mg l(-1) of HT, the highest reported from an engineered S. cerevisiae strain.

Medium chain fatty acids and fatty acid esters as potential markers of alcoholic fermentation of white wines

Summary: This study investigates the impact of fermentation parameters on the aroma components of wines. The results suggest that temperature plays a crucial role in the concentrations of fatty acids and fatty acid esters. By using nitrogen-containing wine additives, better aroma profiles can be achieved for white wines, even with lower quality musts.

Saccharomyces cerevisiae Gene Expression during Fermentation of Pinot Noir Wines at an Industrially Relevant Scale

Summary: An analysis of S. cerevisiae RC212 gene expression during Pinot noir fermentation at pilot scale (150 liters) using industry-relevant conditions revealed both common and diverse gene expression patterns. The reported gene expression patterns of RC212 are generally similar to those observed under laboratory fermentation conditions but also contain gene expression signatures related to yeast-environment interactions found in a production setting. Further research is needed to understand the roles of key genes and pathways highlighted in this study and their impact on industrial wine fermentation outcomes.

Characterization of the Key Aroma Compounds in a Commercial Fino and a Commercial Pedro Ximenez Sherry Wine by Application of the Sensomics Approach
