Characterization of Structural Changes of Casein Micelles at Different PH Using Microscopy and Spectroscopy Techniques

Summary: This study evaluated the influence of pH changes on the morphometric parameters and conformational structure of casein micelles. It was found that the morphology and secondary structure of casein micelles strongly depend on pH. Atomic force and cryo-transmission electron microscopy were used to characterize the changes in average roughness, size, and shape of the micelles at different pH levels. Raman spectroscopy was also used to evaluate the folding and unfolding of casein molecules, which correlated well with the morphometric changes of the micelles.

Biogenic fabrication of silver nanoparticles, oxidative dissolution and antimicrobial activities

Summary: In this study, metallic silver nanoparticles were prepared using Foeniculum vulgare Mill seeds extract, and the photooxidative dissolution of AgNPs with persulfate under UV light was investigated. The results showed that temperature and persulfate concentration significantly influenced the dissolution of AgNPs. AgNPs exhibited antimicrobial effects against Staphylococcus auerus, Escherichia coli, and Candida albicans.

Native disulphide-linked dimers facilitate amyloid fibril formation by bovine milk αS2-casein

Summary: Bovine milk alpha(S2)-casein, an intrinsically disordered protein, readily forms amyloid fibrils in vitro. The disulfide-linked dimer of this protein has a greater propensity to form amyloid fibrils than its monomeric counterpart when incubated at 37 degrees Celsius. Experimental results suggest that the dimer structure of this protein exhibits amyloid-like characteristics.

Influence of calcium and magnesium on the secondary structure in solutions of individual caseins and binary casein mixtures

Spectroscopic and docking studies of the interaction mechanisms of xylitol with α-casein and κ-casein

Summary: The study showed that xylitol interacts with alpha-casein and kappa-casein by static quenching, with different binding affinities at different temperatures. The molecular docking results indicated that xylitol had distinct binding sites on alpha-casein and kappa-casein, involving multiple amino acids in the binding processes.
