Summary: The study aimed to validate the application of an endogenous lactic acid bacterium strain in Cobrancosa table olives, providing a more standardized process and increasing the commercial value of the olives. Through monitoring and assessment for 8 months, it was found that the best treatment protocol was the addition of Lpb. pentosus i106 as a supplementary additive, rather than a starter culture.

Impact of Wastewater Spreading on Properties of Tunisian Soil under Arid Climate

Summary: The study investigated the environmental impacts of irrigating an olive field with olive mill wastewater (OMW) and treated wastewater (TWW) on soil properties. The results showed that TWW application increased soil pH, EC values, and certain nutrient contents in all soil layers, while decreasing other nutrient concentrations and organic matter content. On the other hand, soil adjusted with OMW showed varying effects on nutrient contents depending on soil depth and applied dose.

Patterns of specialisation by country and sector in olive applications

Summary: Natural resource endowments can determine a country's specialization and advantages in international networks, but they can also limit a country to low value-added activities in global value chains. This paper analyzes country specialization patterns in different sectors using olive applications. The analysis reveals heterogeneity among olive-producing countries, and suggests that demand opportunities associated with healthier lifestyles and circular economy policies are driving the diversification of olive uses.

Cobrancosa Table Olives: Characterization of Processing Method and Lactic Acid Bacteria Profile throughout Spontaneous Fermentation

Summary: The physicochemical, biochemical, and microbiological characterization of Cobrancosa table olives was conducted in this study to support the potential granting of a PDO status. The study found that there were two shared stages in the production process: sweetening and salting. Yeasts dominated during the sweetening stage, while the viable counts of Lactic Acid Bacteria (LAB) were similar at the end of salting. Lpb. pentosus, Lpb. paraplantarum, Pediococcus parvulus, and Oenococcus kitaharae were the most abundant LAB strains identified.

Study of phenolic composition of olive fruits: validation of a simple and fast HPLC-UV method

Summary: A high-performance liquid chromatography (HPLC) method was established and validated for the determination of phenolic compounds in olive fruit development. The method showed good linearity and repeatability, with verbascoside identified as the major phenolic compound in black olives and oleuropein identified as the dominating compound in green olives.

Volatile Composition of Industrially Fermented Table Olives from Greece

Summary: The volatile components of industrially fermented table olives from three Greek cultivars were analyzed, revealing over 100 volatile compounds distributed across different chemical classes. All samples were rich in esters, alcohols, and acids, with the Halkidiki cultivar showing increased levels of volatile phenols. Qualitative and quantitative differences were observed, allowing for discrimination of table olives based on cultivar and growing location. This study is believed to be the first systematic exploration of the volatile profiles of Greek table olives, emphasizing the significant effect of growing location.
