Utilizing yeasts for the conversion of renewable feedstocks to sugar alcohols - a review

Summary: Sugar alcohols are valuable compounds used as low- or non-calorigenic sweeteners in the food industry. Currently, they are mostly produced chemically, but there is a potential shift towards using renewable, nonedible feedstocks. Yeasts have the ability to convert these renewable feedstocks into sugar alcohols, but there are challenges in achieving high yields and productivities necessary for industrialization.

Finally, the authors highlight potential applications of modifying the HOG pathway to enhance fungal-based production of natural products in the industry.
