Geographical discrimination of olive oils from Cv. 'Galega Vulgar'

How Temperatures May Affect the Synthesis of Fatty Acids during Olive Fruit Ripening: Genes at Work in the Field

Summary: A major concern in olive cultivation outside of the Mediterranean region is the adaptation of introduced cultivars to different environmental conditions. This study evaluated the effects of thermal regime on fatty acid desaturase gene expression and unsaturated fatty acid contents in two olive cultivars (Arbequina and Coratina) across a latitudinal gradient in Argentina. The results showed that thermal regime influenced gene expression and fatty acid composition, with Arbequina being more sensitive to temperature than Coratina. These findings could guide future strategies for olive cultivation in diverse thermal environments and aid in evaluating olive varietal diversity.

Comparison of canola oil and olive oil consumption on the serum lipid profile in adults: a systematic review and meta-analysis of randomized controlled trials

Chemical and volatile characteristics of olive oils extracted from four varieties grown in southwest of China
