Comparison of the Proximate Composition and Nutritional Profile of Byproducts and Edible Parts of Five Species of Shrimp

Zhenyang Liu et al.

Summary: The meat of five species of shrimp (Litopenaeus vannamei, Macrobrachium rosenbergii, Penaeus monodon, Fenneropenaeus chinensis, and Penaeus japonicus) contains high levels of crude protein, while shrimp heads are rich in polyunsaturated fatty acids. Shrimp byproducts are rich in macro- and micro-minerals and other bioactive ingredients (e.g., astaxanthin). Shrimp have high nutritional value and are suitable for developing biological resources and natural nutraceuticals.

Change Regularity of Taste and the Performance of Endogenous Proteases in Shrimp (Penaens vannamei) Head during Autolysis

Shujian Wu et al.

Summary: This study evaluated the food safety and proximate composition of shrimp head, finding that potentially toxic elements in shrimp head were below European Union legislation limits. Shrimp head had a high content of tasting amino acids and functional amino acids, with the best umami taste occurring during autolysis. The study also investigated the performance of endogenous proteases in shrimp head to efficiently analyze autolysis.
