Quality Evaluation of Three Kinds of Hickories Based on Grey Relational Analysis and Entropy-Weight Theory

Yanrong Hu et al.

Summary: This study tested the nutritional ingredient, aroma component, and texture of three types of hickory nuts and analyzed their quality using various methods. The results showed that the American hickory had the highest score in terms of nutritional composition, while the Linan hickory had the highest score in terms of nutritional composition and texture. The comprehensive evaluation indicated that the quality of Linan hickory was the highest, supported by its superior fatty acid spectrum, amino acid spectrum, and chewing hardness, as well as its palatability and unique aroma components. These findings provide a basis for consumers to understand the quality differences among different types of hickory nuts.

Effects of different antioxidants and their combinations on the oxidative stability of DHA algae oil and walnut oil

Xue-Chen Pei et al.

Summary: By monitoring Rancimat induction time (RIT), peroxide value (POV), and thiobarbituric acid-reactive substances (TBARS) of docosahexaenoic add (DHA) algae oil and walnut oil during accelerated storage, the study evaluated the effects of single and combined use of seven antioxidants on lipid oxidation. The results showed that samples with TPP had the strongest stability. The shelf lives of the oils were predicted using a linear regression model, and the optimal antioxidants were found to significantly prolong the shelf lives of DHA algae oil and walnut oil.

Sensory and nutritional attributes of Persian walnut kernel influenced by maturity stage, drying method, and cultivar

Susan Pakrah et al.

Summary: The study investigates the impact of drying methods and harvesting date on the sensory and nutritional properties of walnut kernels. It found that drying at 20 degrees Celsius resulted in higher protein and fatty acid content as well as better quality indicators compared to other drying methods. Additionally, late-harvested Persian walnuts showed higher protein and oil content but with darker color and higher peroxide value compared to early-harvested walnuts. The results suggest that walnut kernel color and shrivel can serve as indicators of the nutritional quality of walnut kernels.
