Sensory quality and shelf-life of locally produced British butters compared to large-scale, industrially produced butters

Summary: The purpose of this pilot-scale study was to compare the quality of traditionally manufactured butters from local, small British producers with the quality of butters that are produced industrially. Butter samples were obtained after supervised site inspections of traditional-butter manufacturers and a large-scale butter producer. Findings showed that traditional butters matched or exceeded the sensory quality of industrial butters, but spoilage microorganisms tended to grow faster on traditional butters.

The Effect of Essential Oils on the Survival of Bifidobacterium in In Vitro Conditions and in Fermented Cream

Summary: In this study, essential oils derived from lemon peels, clove buds, and juniper berries were obtained and their chemical compositions were analyzed. The results showed that these essential oils had inhibitory effects on the growth of a specific strain of Bifidobacterium, but did not affect the bacterial count in dairy products, indicating their potential as natural additives.

Properties of Rice-Based Beverages Fermented with Lactic Acid Bacteria and Propionibacterium

Summary: In this study, the properties of yogurt-type rice-based beverages fermented with lactic acid bacteria and Propionibacterium were investigated. The results showed that the combination of lactic and propionic fermentation can help in the production of rice-based yogurt-type milk substitutes, with a high number of beneficial bacteria and varied physical properties and sugar content depending on the starter culture used.

The Effect of Selected Herbal Extracts on Lactic Acid Bacteria Activity

Summary: The study found that adding plant extracts did not inhibit the growth of lactic acid bacteria in fermented milk drinks, but could gradually inhibit fermentation at concentrations above 2% by weight. The microflora of yogurts containing the extracts was not affected by simulated digestive juices, and no stimulating effect was observed. The antioxidant properties of the extracts can enhance the nutritional quality of food products, making them functional foods.
