Changing the IgE Binding Capacity of Tropomyosin in Shrimp through Structural Modification Induced by Cold Plasma and Glycation Treatment

Deconstruction of pineapple peel cellulose based on Fe2+assisted cold plasma pretreatment for cellulose nanofibrils preparation

Summary: An effective method based on Fe2+ assisted cold plasma was proposed to pretreat pineapple peel cellulose for the preparation of cellulose nanofibrils (CNF). The mechanism underlying Fe2+ assisted cold plasma pretreatment and the resulting changes in cellulose structure were investigated. The results showed that Fe2+ assisted cold plasma treatment significantly decreased the degree of polymerization of cellulose and enhanced electrostatic repulsion of fibrils, leading to the production of CNF. The study provides important insights into developing new pretreatment methods for converting cellulose into CNF.

Potential application of DBD Plasma Technique for modifying structural and physicochemical properties of Soy Protein Isolate

Summary: This study aimed to modify soy protein isolate (SPI) using dielectric barrier discharge (DBD) plasma and investigate the effects on its structural and physicochemical properties. Results showed that plasma treatment enhanced the emulsifying properties, solubility, water holding capacity, and foaming activity of SPI, with the best results obtained at 18 kV for 15 minutes. Exposure to DBD plasma at 18 kV led to an increase in free and reactive sulfhydryl and free carbonyl contents. FTIR and CD results indicated partial denaturation and unfolding of alpha-helix structure of SPI followed by the formation of protein aggregates.

Effect of the structure and potential allergenicity of glycated tropomyosin, the shrimp allergen

Summary: The aim of this study was to investigate whether the structural changes of shrimp tropomyosin (TM) caused by ribose treatment affected its allergenicity. The results showed that ribose treatment induced conformational changes in TM and altered specific amino acid residues, leading to a decrease in allergenicity.

Insight into IgG/IgE binding ability, in vitro digestibility and structural changes of shrimp (Litopenaeus vannamei) soluble extracts with thermal processing

Summary: The effects of six different thermal processing methods on soluble protein recovery, potential allergenicity, in vitro digestibility, and structural characteristics of shrimp soluble proteins were evaluated. The results showed that the thermal treatments significantly decreased soluble protein recovery and IgG/IgE reactivity of shrimp soluble extracts. Digestibility was enhanced depending on the type and extent of heating, and this was correlated with structural alterations and modification. The highest reduction in IgG/IgE-binding capacity and digestive stability was observed in autoclaved shrimps due to protein unfolding and exposure of hydrophobic residues. Interestingly, tropomyosin (TM) and sarcoplasmic calcium-binding protein (SCP) still exhibited IgG/IgE reactivity in various heat-treated shrimps. Higher IgG reactivity was found in heat-treated shrimps TM. TM and SCP maintained their IgE/IgG-binding capacity after different cooking methods, suggesting the potential for allergic sensitization to both raw and cooked shrimps.

Reducing the Allergenicity of Shrimp Tropomyosin and Allergy Desensitization Based on Glycation Modification

Summary: This study found that glycation modification of TM with saccharides of different molecular sizes can lead to the generation of hypoallergenic GTM, with TM glycated by maltose exhibiting lower allergenicity changes upon activating allergic reactions of mast cells and mouse models. Hypoallergenic GTM + Al(OH)(3) was also shown to be an effective candidate immunotherapy for desensitizing allergic reactions in patients allergic to shrimp food, providing preclinical data to support its use.

Effects of the Maillard reaction on the epitopes and immunoreactivity of tropomyosin, a major allergen in Chlamys nobilis

Summary: Scallop has been identified to cause an IgE-mediated food allergy, with the major allergen tropomyosin (TM) purified from scallops through proteomic technology. Utilizing phage display and inhibition enzyme-linked immunosorbent assays, seven potential IgE epitopes of TM were identified. Maillard-reacted TM (MR-TM) showed decreased immunobinding activity, providing a theoretical reference for the development of hypoallergenic foods.

Effects of thermal processing on the allergenicity, structure, and critical epitope amino acids of crab tropomyosin
