Volatile Organic Compounds and 16S Metabarcoding in Ice-Stored Red Seabream Pagrus major

Summary: This study investigated the changes in bacterial communities and volatile organic compounds (VOCs) during ice storage of farmed red seabream. The results showed that Psychrobacter and Pseudomonas were the most abundant bacteria in the fish tissue, and the VOC profiles differed between two batches of fish. Fifteen compounds were identified as potential spoilage markers or freshness markers for red seabream. This information can be used to develop intelligent approaches for rapid evaluation of spoilage in red seabream during ice storage.

A cross-sectional study in Mediterranean European countries to support stakeholders in addressing future market demands: Consumption of farmed fish products

Summary: Aquaculture is seen as a viable alternative to replenish depleted wild fish stocks and promote alternative animal protein sources, but consumer perception towards farmed fish is less positive compared to wild fish. A study investigating the consumption choices of sea bass and sea bream in the Mediterranean countries identified 11 distinct consumer profiles across France, Spain, Greece, and Italy. Different socio-economic characteristics, purchasing habits, and product attributes play a significant role in consumer choices, highlighting the importance of understanding preferences and information to respond to market demands and improve consumer confidence in farmed fish products.

Raw and Cooked Quality of Gilthead Seabream Fillets (Sparus aurata, L.) after Mild Processing via Osmotic Dehydration for Shelf Life Extension

Summary: The current study aimed to explore the effects of mild processing for shelf-life extension on the raw and cooked quality of gilthead seabream fillets. The results showed that the treated fillets exhibited better freshness and reduced spoilage-related sensory attributes compared to the control ones. The treatment also induced new sensory characteristics in the fillets, which contributed to the preservation of their quality.
