Identification of gallotannins and ellagitannins in aged wine spirits: A new perspective using alternative ageing technology and high-resolution mass spectrometry

Tiago A. Fernandes et al.

Summary: This research focused on identifying the degradation pathways of gallotannins and ellagitannins in wine spirits during the ageing process, and revealed the importance of oxygen in their formation and degradation. It also explained the steady increase of gallic and ellagic acid contents during ageing. Furthermore, various tannin compounds were found in the wine spirits aged with chestnut wood.

Toxic Mechanisms of Five Heavy Metals: Mercury, Lead, Chromium, Cadmium, and Arsenic

Mahdi Balali-Mood et al.

Summary: Industrial activities of the last century have led to increased human exposure to heavy metals such as mercury, lead, chromium, cadmium, and arsenic, resulting in acute or chronic poisonings through water, air, and food. These heavy metals accumulate in the body, causing toxic effects on various tissues and organs by disrupting cellular events and inducing oxidative stress. Common mechanisms of action of these metals include ROS generation, inhibition of antioxidant defense, enzyme inactivation, and selective binding to specific macromolecules, some leading to genomic instability and carcinogenicity through DNA damage and oxidative stress. Despite current knowledge, heavy metal poisoning incidents remain prevalent, necessitating preventive measures and effective treatment, possibly including chelation therapy.

Effect of Barrel-to-Barrel Variation on Color and Phenolic Composition of a Red Wine

Leonard Pfahl et al.

Summary: The study found that sensory characteristics in wine aged in similar barrels often show tangible variations, mainly due to phenolic compounds. Three cooperages had similar influences on the aged wine, with anthocyanin-related parameters showing the highest variation.
