Identification and molecular docking of novel α-glucosidase inhibitory peptides from hydrolysates of Binglangjiang buffalo casein

Four synthetic peptides were found to have alpha-glucosidase inhibitory activity, hindering the formation of complex and glycosylation between alpha-glucosidase and substrate. The study provides insights for understanding the antidiabetic mechanism of the peptides and the development of antidiabetic functional food.

Efficient enzymatic production of angiotensin I-converting enzyme inhibitory peptides from three protein-rich materials by electrolyzed water pretreatment

Summary: The study showed that using a self-designed alkaline electrolyzed water pretreatment equipment to pretreat protein-rich materials can significantly improve hydrolysis efficiency and promote the release of antihypertensive peptides. Experimental results indicated that DWM pretreated with AEW exhibited the highest ACE inhibitory activity and protein recovery rate during hydrolysis.

Exploration of Dipeptidyl Peptidase-IV (DPP-IV) Inhibitory Peptides from Silkworm Pupae (Bombyx mori) Proteins Based on In Silico and In Vitro Assessments

Summary: This study aimed to explore DPP-IV inhibitory peptides from silkworm pupae proteins through in silico analysis and in vitro assessments. The results showed that pepsin and bromelain treatment led to better production of DPP-IV inhibitory peptides from silkworm pupae protein. Two novel DPP-IV inhibitory peptides were identified and exhibited mixed-type inhibition mode. This study demonstrated that in silico analysis combined with in vitro assessments can be an effective approach for discovering DPP-IV peptides from silkworm pupae proteins.

Enhancement of rice protein hydrolysate quality using a novel dual enzyme system

Summary: In this study, dual enzyme hydrolysis was used to produce rice protein hydrolysates with reduced bitterness and high nutritional value. The results showed that the dual enzyme system successfully produced small peptide-RPI hydrolysates without any bitterness. These hydrolysates exhibited high inhibitory activity of angiotensin-converting enzyme and scavenging activity of radicals, indicating their potential as bioactive peptides.
