Formulation and evaluation of cold-extruded chocolate ganache for three-dimensional food printing

Sun Min Kim et al.

Summary: Through experiments, it was determined that chocolate ganache with 30% whipped cream content showed the highest resolution, while chocolate ganache with 20% cocoa powder content exhibited the best results in terms of rheology, emulsion stability, and printing accuracy. The addition of cocoa powder not only increased the load-bearing capacity of the ganache, but also acted as a Pickering particle, demonstrating potential for use in temperature-stabilized three-dimensionally printed food products.

Enrichment of γ-aminobutyric acid in mulberry leaves and the inhibitory effects of the water extract on ACE and α-glucosidase activity

Jie Tu et al.

Summary: Different methods were used to treat mulberry leaves and accumulate gamma-aminobutyric acid (GABA), which increased ACE inhibitory activity. Molecular docking showed that GABA interacts with ACE through zinc ion chelation. However, the inhibition of mulberry leaf extract on alpha-glucosidase was not closely related to GABA content.
