Fabrication of gelatin-EGCG-pectin ternary complex stabilized W/O/W double emulsions by ultrasonic emulsification: Physicochemical stability, rheological properties and structure

Summary: In this study, W-1/O/W-2 double emulsion was prepared using ultrasonic emulsification technology, and its stability, rheological properties, thermal stability, and microstructure were investigated. The results showed that the gelatin-EGCG-high methoxyl pectin ternary complex can act as an effective emulsion stabilizer to stabilize the W-1/O/W-2 double emulsion.

Effect of chitooligosaccharide and α-tocopherol on physical properties and oxidative stability of shrimp oil-in-water emulsion stabilized by bovine serum albumin-chitosan complex

Summary: This study investigated the effects of chitooligosaccharides (COS) or alpha-tocopherol (TC) or their combinations (COS-TC; 1:1) at different concentrations (0.2 and 0.4 g/L) on the physical properties and oxidative stability of shrimp oil-in-water emulsion during a 30-day storage at 25°C. The results showed that the addition of COS-TC resulted in higher turbidity, rheological properties, color values, and lower brightness values. At day 30, the samples added with 0.4 g/L COS-TC exhibited the lowest peroxide value and oxidative compounds. Additionally, the addition of COS-TC helped alleviate the degradation of polyunsaturated fatty acids.

Improving freeze-thaw stability of soy protein isolate-glucosamine emulsion by transglutaminase glycosylation
