Role of lactic acid bacteria in flavor development in traditional Chinese fermented foods: A review

Summary: Traditional Chinese fermented foods are popular due to their unique flavor, texture, and nutritional values. Lactic acid bacteria (LAB) play a crucial role in flavor formation, with carbohydrate metabolism, proteolysis and amino acid catabolism, and lipolysis and fatty acid metabolism being the main mechanisms involved. The use of functional starter cultures and metabolic engineering shows promise in enhancing the flavor of fermented foods.

Application of lactic acid bacteria for improving the quality of reduced-salt dry fermented sausage: Texture, color, and flavor profiles

Summary: The traditional dry sausage in China is popular for its unique qualities, but often contains high salt content. This study examined the effects of different lactic acid bacteria on reduced-salt dry fermented sausages, finding that Lactobacillus plantarum sausage had higher shear force values and lighter color compared to others. Analysis showed that L. curvatus and L. plantarum could be used as potential starter cultures to produce reduced-salt sausages with improved texture, color, and flavor.

Genomic features, aroma profiles, and probiotic potential of the Debaryomyces hansenii species complex strains isolated from Korean soybean fermented food

Summary: This study conducted genomic analysis and physiological characterization of two Debaryomyces spp. yeast isolates obtained from Korean traditional fermented soy sauce. The results showed that these yeast isolates have halotolerance and improved growth in the presence of high concentrations of salt. They also have the ability to produce various flavor compounds and exhibit high bioconversion activity. Furthermore, they showed immunomodulatory activity and were confirmed to be safe.

Biocontrol of ochratoxigenic Penicillium nordicum in dry-cured fermented sausages by Debaryomyces hansenii and Staphylococcus xylosus

Summary: This study evaluated the effect of two microorganisms isolated from dry-cured meat products, Debaryomyces hansenii and Staphylococcus xylosus, as biocontrol agents (BCAs) against the ochratoxin A (OTA) producing mould Penicillium nordicum during the ripening of dry-cured fermented sausages. The BCAs were able to colonise and develop throughout the processing, and although they did not reduce the growth of P. nordicum, a decrease in OTA was observed in sausages inoculated with D. hansenii individually or combined with S. xylosus.

Technological characterization and flavor-producing potential of lactic acid bacteria isolated from traditional dry fermented sausages in northeast China
