Effect of soy protein isolate on physical properties of quinoa dough and gluten-free bread quality characteristics

Summary: The study investigated the effects of soy protein isolate (SPI) on the physical properties of quinoa dough and gluten-free bread quality characteristics. Results showed that appropriate SPI substitution significantly improved the farinograph and extensograph properties of quinoa flour. Additionally, SPI substitution improved the rheological properties of quinoa dough and the quality and texture of quinoa bread, bringing it closer to wheat bread.

Effects of plasma-activated water and heat moisture treatment on the properties of wheat flour and dough

Summary: Plasma-activated water (PAW) and heat-moisture treatment (HMT) can be used for modifying flour, promoting granule clustering and increasing particle size, accelerating molecular interactions between wheat starch and non-starch components leading to increased resistant starch (RS) content. Addition of modified flour improves dough rheological properties while causing varying degrees of damage to the gluten protein network structure.

Effect of Homogenization Modified Rice Protein on the Pasting Properties of Rice Starch

Summary: Modification of plant-based proteins has wide applications in the food industry. Homogenization of rice protein from rice residues decreases particle size and increases water holding capacity, without changing band distribution in SDS-PAGE. Addition of homogenized proteins into rice starch reduces peak viscosity and decreases breakdown and setback values, indicating improved stability and inhibition of retrogradation. Homogenized proteins may be a potential candidate for protein-rich starchy product development.

Effect of ultrasonic intensity on structure and properties of wheat starch-monoglyceride complex and its influence on quality of norther-style Chinese steamed bread

Summary: The study investigated the impact of ultrasonic intensity on wheat starch-monoglyceride complex (WSG) and its effects on steamed bread quality. Results showed changes in crystal type and absorption peaks of starch with monoglycerides, the formation of WSG complex, and an increase in resistant starch content. Addition of WSG negatively affected specific volume and springiness of steamed bread but increased spread ratio, hardness, and chewiness, with best results observed at 375 W. Excessive WSG addition was found to be detrimental to steamed bread quality, with flour blends containing 5-10% WSG producing steamed bread comparable to control flour.
